And I’m back with a bunch of 21 Day Fix lunch ideas. I’m trying to avoid the salad rut, so I’ve been experimenting with some new lunch ideas. You’ll see that my go-to veggies are bell peppers and onions. I prep them and freeze them until needed. You can swap in your preferred veggies or whatever you have on hand.

Make that morning

Sandwich with fruit: 2 yellow, 1 red, 1 blue, 1 purple
Assemble a sandwich with two slices of bread, meat (normally turkey or chicken), a container (or a slice) of cheese, and serve with a container of fruit (usually grapes).

Salad with chicken: 2-3 green, 1 red, 1 orange, 1 blue, 1 spoon
Toss lettuce, spinach, mixed veggies, and grilled chicken. You can add dressing, nuts, or olives for extra flavor. This is a great way to knock out a few green containers in one meal.

Chicken Gyro: 2 red, 1 yellow, 2 green, 1 blue
Split a pita. Spread either hummus (blue) or Greek yogurt (red) on each half of the pita. Add chicken, lettuce, and cucumbers.
