We’ve been doing the keto thing for close to four months. While I meal plan each week to keep us on track, I find that we default to a few trustworthy dishes. Living in Georgia allows us to grill almost all year, so we heat up the grill a few nights a week. Here are some of our go-to keto meals.
Fathead pizza
Y’all. If you love pizza, you should jump on the fathead pizza dough bandwagon. Fathead dough uses low-moisture mozzarella and almond flour. The recipe I use is from a screenshot of an Instagram photo of a Pinterest post, but it is good. It doesn’t taste exactly like traditional dough, but it makes a solid pizza.
Grilled sausage and creamed spinach
This is one of those throw-together keto meals. Mac grills up a package of whatever sausage we have on hand, and I whip up a batch of creamed spinach. I started making creamed spinach to use up any leftovers from the spinach I buy for Mac’s lunches, and I honestly kind of love it. This whole meal comes together in 10-15 minutes.
Chicken and zoodles
Chicken and zoodles are a really versatile pairing. You could go for an Italian inspired meal with chicken Parmesan and zoodles with marinara sauce. Or marinate chicken, grill it up, and serve it with this French onion zoodle bake (thanks, Kait!). I need to find a good Asian-inspired zoodle sauce to whip up a keto friendly stir fry.
Meatballs and green beans
This is another keto meal that doesn’t take much time. You can buy premade meatballs (check the carbs first!), or you can make them from scratch. I swap out breadcrumbs for almond flour in my standard meatball recipe. We loved these nacho meatballs. Green beans pair well as a side for meatballs. You can cook fresh, frozen, or canned depending on your preference. We’ve been known to make up a batch of cheese sauce to top the beans and occasionally the meatballs.
