Peanut butter blossoms: Twelve Days of Christmas Cookies

Peanut butter blossoms are just a classic cookie that everyone loves. I made them with some Kisses I got in an Influenster VoxBox earlier this year and was surprised that many of my co-workers had never tried them. If you love peanut butter and chocolate, these cookies are the perfect treat for you. I’m not a huge peanut butter in baked goods fan, but I can’t (and won’t) stop eating these cookies.

While peanut butter blossoms may not be the most original Christmas cookie recipe, my family make them every year. The traditional recipe calls for creamy peanut butter, but I like to bake these with chunky peanut butter. Chunky peanut butter adds a bit of a crunch in an otherwise soft cookie. You’ll also want to use shortening to keep your cookies from being too buttery and soft. The cookie needs to have some oomph to it to hold the Hershey kiss.
I find that keeping the peanut butter blossoms on the small side ensures you get a bit of chocolate in each bite. You can also roll the dough balls in more granulated sugar for an extra sweetness and crunch. But you don’t need to chill the dough or flatten out the cookies. Once they’re baked, press a Hershey kiss on the top of each cookie. You want the cookies to be nice and soft to help the kiss stick. Depending on how big you make the cookies, you can get between 36 and 48 peanut butter blossoms from one batch of dough.

Ingredients
- 1 3/4 cups of all purpose flour
- 1/2 cup of granulated sugar
- 1/2 cup of firmly packed brown sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup of shortening
- 1/2 cup of creamy peanut butter
- 2 tablespoons of milk
- 1 teaspoon vanilla
- 1 egg
- Extra sugar
- 48 unwrapped Hershey Kisses
Instructions
- Heat oven to 375°F.
- In large bowl, combine flour, 1/2 cup sugar, brown sugar, baking soda, salt, shortening, peanut butter, milk, vanilla and egg until stiff dough forms.
- Shape dough into 1-inch balls, roll in extra sugar, and place ungreased cookie sheets.
- Bake for 10 to 12 minutes or until golden brown.
- Immediately top each cookie with 1 Kiss, pressing down firmly so cookie cracks around edge; remove from cookie sheets.
