West End Cajun pasta

I really didn’t eat pasta in college, but my main choice was this creamy Cajun pasta sauce. At West End (the premiere dining hall on campus), you picked a sauce and a pasta from a daily selection. This is not a true “Cajun pasta” recipe, just my recreation of a dish I ate regularly.

West End Cajun pasta

Ingredients

  • 1 12 ounce jar Alfredo sauce (I use Classico’s light Alfredo sauce)
  • 1 12 ounce jar plain marinara sauce (or about half of a big jar)
  • 34 teaspoons Cajun seasoning
  • 1 box of penne or ziti type pasta

Instructions

  1. Cook pasta in boiling water, according to box directions. Drain.
  2. In medium sauce pan, mix Alfredo sauce and marinara sauce well.
  3. Add a teaspoon of Cajun seasoning at a time until you reach your desired flavor and heat. Cajun seasoning can be very powerful, so I add it in small amounts. Heat through.
  4. Serve with some garlic bread and enjoy!
