I really didn’t eat pasta in college, but my main choice was this creamy Cajun pasta sauce. At West End (the premiere dining hall on campus), you picked a sauce and a pasta from a daily selection. This is not a true “Cajun pasta” recipe, just my recreation of a dish I ate regularly.

Ingredients

- 1 12 ounce jar Alfredo sauce (I use Classico’s light Alfredo sauce)
- 1 12 ounce jar plain marinara sauce (or about half of a big jar)
- 3–4 teaspoons Cajun seasoning
- 1 box of penne or ziti type pasta
Instructions
- Cook pasta in boiling water, according to box directions. Drain.
- In medium sauce pan, mix Alfredo sauce and marinara sauce well.
- Add a teaspoon of Cajun seasoning at a time until you reach your desired flavor and heat. Cajun seasoning can be very powerful, so I add it in small amounts. Heat through.
- Serve with some garlic bread and enjoy!
