Smashed potatoes
I first found this recipe from The Pioneer Woman. We had a few leftover potatoes, and I gave it the ole college try. I used butter instead of olive oil and threw on my standard spud seasonings, Cajun blend and garlic salt. Fajita enchiladas
Mac and I first made enchiladas back when he was stationed at Fort Sill in 2009. We’ve made them a lot since then, so we’ve tweaked this recipe over the years.
