After creating my Spicy Ranch Chex Mix, I decided that I needed a sweet option to complement the spicy. I mulled over a few ideas and came up with this Ice Cream Sundae Chex Mix. It has the flavors of an ice cream sundae with a nice mix of crunch.
Like any Chex Mix, you can use a mix of your favorite Chex Mix. I personally always use rice and corn. You’ll want at least 5 cups, but you can stretch this recipe to 6 cups. And what ice cream sundae Chex Mix would be complete without caramel sauce or waffle cones? You’ll get those flavors from waffle cone bowls and caramel rice cakes. If you can find them, buy the actual waffle cone bowls. They break apart much more easily, and you don’t have any overly crunchy parts (like the bottom of the cone). The caramel rice cakes add a delicious caramel sauce flavor without all of the stickiness of caramel sauce. Break both the waffle cone bowls and the caramel rice cakes into smaller pieces, similar in size to the Chex cereal.
The secret to really smooth white chocolate it to mix a few tablespoons of neutral oil in as you’re melting the chips. I would recommend vegetable or canola. Microwave your chocolate and oil for about 30 seconds at a time then stir. It’ll take two or three minutes, depending on your microwave.
Finally, you need sundae toppings for your ice cream sundae Chex Mix. I opted to get my chocolate flavor from mini M&Ms. They’re a bit easier to mix in because of their size. And I stirred in peanuts. I found pre-chopped peanuts without skins, but you can leave them whole or chop them based on your preference. You can also reserve some of the mini M&Ms and peanuts to sprinkle over the finished Chex Mix.

Ingredients
- 5 cups of rice and corn Chex cereal
- 1 bag of caramel rice cakes
- 1 package of waffle cone bowls
- 10 ounces of white chocolate chips
- 2 tablespoons of neutral oil
- 1 cup of mini M&Ms
- 1 cup of peanuts, roughly chopped
Instructions
- Break the waffle cone bowls and caramel rice cakes into smaller pieces in a very large bowl. Add the Chex cereal.
- Add the white chocolate chips and the oil to a microwave-safe bowl. Microwave for 30 seconds a time. Stir at each 30 seconds, and continue heating until melted (2-3 minutes).
- Pour the melted white chocolate over the cereal mix. Gently toss with a spoon until evenly coated.
- Optional: reserve about a quarter cup each of the mini M&Ms and peanuts.
- Fold the remaining mini M&Ms and peanuts into the cereal mix. Toss to coat. The M&Ms will probably start to melt, so don’t stir too hard.
- Optional: Top with the reserved M&Ms and peanuts.
- Allow to set. This will take at least 30 minutes at room temperature, or 5-10 minutes in the fridge.
- Break apart into smaller chunks for serving.
