Ice Cream Sundae Chex Mix

Ingredients

  • 5 cups of rice and corn Chex cereal
  • 1 bag of caramel rice cakes
  • 1 package of waffle cone bowls
  • 10 ounces of white chocolate chips
  • 2 tablespoons of neutral oil
  • 1 cup of mini M&Ms
  • 1 cup of peanuts, roughly chopped

Instructions

  1. Break the waffle cone bowls and caramel rice cakes into smaller pieces in a very large bowl. Add the Chex cereal.
  2. Add the white chocolate chips and the oil to a microwave-safe bowl. Microwave for 30 seconds a time. Stir at each 30 seconds, and continue heating until melted (2-3 minutes).
  3. Pour the melted white chocolate over the cereal mix. Gently toss with a spoon until evenly coated.
  4. Optional: reserve about a quarter cup each of the mini M&Ms and peanuts.
  5. Fold the remaining mini M&Ms and peanuts into the cereal mix. Toss to coat. The M&Ms will probably start to melt, so don’t stir too hard.
  6. Optional: Top with the reserved M&Ms and peanuts.
  7. Allow to set. This will take at least 30 minutes at room temperature, or 5-10 minutes in the fridge.
  8. Break apart into smaller chunks for serving.
