Mac loves everything bagels. In our lower carb life, I’m trying to find recipes that can replace the high carb items and still have flavor. I like to prep breakfast once a week, so we have easy options throughout the work week. Check out some of my other favorite keto breakfast ideas here. Enter everything but the bagel seasoning. And this everything but the bagel breakfast bake. It’s filling, flavorful, and keeps well during the week. The seasoning adds a nice blend of onion and garlic with a boost of savory flavor. It’s also a new recipe to mix up our regular meal prep and planning.
This everything but the bagel breakfast bake is pretty easy to adapt to be lower carb. If you want to go hardcore keto, leave out all of the potatoes. You can also reduce the potatoes and use a quarter of the bag. If you nix the potatoes, I would add some more breakfast meat for more oomph. I use pre-shredded cheese, so that adds slightly more carbs to each serving. Grating your own can save those. And feel free to add more cheese. You can stir some in with the potatoes when you assemble the breakfast bake.
You also have a few other options for shortcuts. Try pre-cooked bacon if you’re pressed for time, or you can skip cooking the potatoes. Add a few minutes of baking time if you don’t cook the potatoes first. I also think roasting the potatoes on a sheet pan instead of frying them would add some great flavor. And you don’t have to use the full dozen eggs. This makes twelve servings, so an even dozen eggs gives you an egg per serving. You can go as low as eight eggs and still have enough eggs.

Ingredients
- 12 eggs
- 1 cup of shredded cheddar cheese
- 1 pound of bacon
- Half of a 32-ounce bag of frozen cubed hash browns (or home fries)
- 2 tablespoons of Everything But The Bagel seasoning, divided
- 1 teaspoon of salt
- 1 teaspoon of pepper
Instructions
- Preheat the oven to 400 degrees.
- In a large frying pan, cook the bacon until your desired crispiness and drain on paper towels.
- Add the hash browns to the bacon grease and cook for 10 minutes until tender (they won’t be fully cooked). Season with the salt and one tablespoon of the Everything But The Bagel seasoning while cooking.
- Crack the eggs in a separate bowl and whisk to scramble. Add the other tablespoon of Everything But The Bagel seasoning, the black pepper, and the cheese. Stir to combine.
- Spray a 9×13 baking dish with nonstick spray. Spread the potatoes evenly across the bottom of the dish. Sprinkle the bacon over the potatoes. Pour the egg mixture in the pan over the potatoes and bacon.
- Bake for 20 minutes or until set and golden brown. Serve warm and cool completely before storing.
