Everything But The Bagel breakfast bake

Ingredients

  • 12 eggs
  • 1 cup of shredded cheddar cheese
  • 1 pound of bacon
  • Half of a 32-ounce bag of frozen cubed hash browns (or home fries)
  • 2 tablespoons of Everything But The Bagel seasoning, divided
  • 1 teaspoon of salt
  • 1 teaspoon of pepper

Instructions

  1. Preheat the oven to 400 degrees.
  2. In a large frying pan, cook the bacon until your desired crispiness and drain on paper towels.
  3. Add the hash browns to the bacon grease and cook for 10 minutes until tender (they won’t be fully cooked). Season with the salt and one tablespoon of the Everything But The Bagel seasoning while cooking.
  4. Crack the eggs in a separate bowl and whisk to scramble. Add the other tablespoon of Everything But The Bagel seasoning, the black pepper, and the cheese. Stir to combine.
  5. Spray a 9×13 baking dish with nonstick spray. Spread the potatoes evenly across the bottom of the dish. Sprinkle the bacon over the potatoes. Pour the egg mixture in the pan over the potatoes and bacon.
  6. Bake for 20 minutes or until set and golden brown. Serve warm and cool completely before storing.
