Hot cocoa brownies

I’m getting into pre-move mode. We’re waiting on the official word, but I’m starting to go through the house to see what won’t be making the move with us. The pantry needs to be cleaned out badly, so I’ve been trying to figure out recipes to use up what’s in there. I found a few packets of hot cocoa mix: enter hot cocoa brownies. I knew that I needed a brownie recipe that uses cocoa powder instead of melted chocolate. So I flipped through my many cookbooks to find a recipe. And I found a perfect choice.

These hot cocoa brownies are chewy, chocolately, and delicious. The hot cocoa mix adds a nice flavor without overpowering the brownies. I sprinkled milk chocolate chips and Mallow Bits on the top. Mallow Bits work so well for baking because they don’t melt the same way that regular marshmallows do. My guess is that regular marshmallows will taste the same, but they’ll be a bit messier and stickier. I found Mallow Bits at Super Target but haven’t been able to find them anywhere else locally.

Hot cocoa brownies

Ingredients

Scale
  • 1/2 cup of canola or vegetable oil
  • 1/4 cup of hot cocoa mix (one 1.25 ounce package)
  • 1 cup of sugar
  • 2 eggs
  • 1 tsp. of vanilla
  • 3/4 cup of all-purpose flour
  • 1/8 teaspoon salt
  • 1/4 cup of milk chocolate chips
  • 1/4 cup of Mallow Bits

Instructions

  1. Preheat the oven to 325 degrees. Spray an 8-inch square pan with non-stick cooking spray.
  2. Combine the oil and the hot cocoa mix in a small bowl. In a separate large bowl, beat sugar and eggs. Stir in vanilla and cocoa mixture.
  3. Whisk in flour and salt and stir until just combined.
  4. Pour batter into the greased pan. Sprinkle chocolate chips and Mallow Bits evenly over the batter.
  5. Bake for 30-40 minutes until set or an inserted toothpick comes out clean. Cool and slice.

Notes

  • Your pan will affect the cooking time. Start checking the brownies at 30 minutes.
