I’ve been in a Rice Krispie treat mood lately. While working on my blog content audit, I decided to remake every recipe to update the photos. This included the bride and groom Rice Krispie treats I made for my sister’s wedding. I still need to redo the monogrammed ones, so I have boxes of Rice Krispies on hand. Mac and I were talking about different ideas to use up the cereal, and I eventually thought up these chocolate strawberry Rice Krispie treats. Y’all, these are good. Really good.
Originally, I tried this recipe with brownie Chex Mix. This was much better in theory than in practice. The Chex Mix coating doesn’t mix well with marshmallows and turned into a sticky (but tasty) mess. So I readjusted and decided to try Cocoa Krispies.
For the sake of disclosure, I didn’t actually use Cocoa Krispies in this version of my chocolate strawberry Rice Krispie treats the first time I made these. The store had a single box of holiday Rice Krispies and nothing else. I wound up buying the Target organic version. They’re somewhere between Cocoa Krispies and Cocoa Pebbles. If you can find them, Cocoa Krispies do work better.
I also used strawberry marshmallows. These are a Valentine’s Day flavor, so you can substitute plain marshmallows if you can’t find them. They don’t add too much of a strawberry flavor. Depending on the baking aisle at your grocery store, you may be able to find them year round. I’ve noticed that Wal-Mart now has a bunch of flavored marshmallows, including strawberry. Also scout the baking aisle or the cereal aisle for freeze-dried strawberries. They add more crunch and the best strawberry flavor.

Ingredients
- 6 cups of Cocoa Krispies cereal
- 1 10-ounce bag of strawberry marshmallows
- 6 tablespoons of butter
- 1 ounce bag of freeze-dried strawberries
- 1/2 cup of mini chocolate chips
Instructions
- Spray a microwave-safe bowl with cooking spray. Pour marshmallows and butter into bowl and microwave for 1-2 minutes until marshmallows are beginning to melt.
- Coat a spatula with cooking spring. Stir marshmallow and butter mixture until smooth. Fold in cereal a cup at a time and stir to coat with marshmallows.
- Roughly chop freeze-dried strawberries. Add chopped strawberries and mini chocolate chips to cereal mixture. Stir until everything is coated and combined.
- Spray a 9×13 pan with cooking spray or line with parchment paper. Transfer the Rice Krispie mixture to the pan and press evenly in pan. Allow to cool before cutting.
- Slice in bars or use a cookie cutter to create fun shapes.

Notes
- You can substitute plain marshmallows if you can’t find strawberry marshmallows.
- You can also substitute regular chocolate chips if you don’t have mini chocolate chips.
