Happy Monday and happy first day of October! It’s in the 80s here today, so I’m ready for fall. I’m also ready for fall baking. Y’all may be in “pumpkin spice everything” season, but I am firmly on team apple. I recently grabbed a bag of apples at the grocery store and headed to my cookbook shelf to find some yummy apple recipes. I found this apple bread recipe in one of the many seasonal baking magazines I own. All I have to say if yum.
This recipe uses shredded apple and is a tasty, crumbly, perfectly sweet (but not too sweet) treat. The batter comes together pretty quickly once you shred the apples, though the bread bakes for about an hour. I was so excited to try the apple bread that I didn’t let it cool fully and it fell apart. As a huge fan of bread and butter, I slathered a few every slice with Kerrygold butter (not sponsored and also a huge fan). This apple bread recipe would be great as a side with breakfast or brunch, on its own as a snack, or even as dessert. I considered trying to make bread pudding or French toast, but the loaf didn’t last long enough to make anything else.
The original apple bread recipe calls for nuts and raisins in the batter and to top it with a nut streusel. Full confession: I left out the nuts, raisins, and streusel because I was feeling lazy. I didn’t miss them, and I have included the amounts of those in the recipe if you would like to try them.

Ingredients
Apple bread
- 1/2 cup butter, softened
- 1 cup sugar
- 1/4 cup buttermilk or sour milk
- 2 tsp baking powder
- 2 eggs
- 1 tsp vanilla
- 2 cups all-purpose flour
- 1/2 tsp salt
- 2 cups shredded, peeled apple (I used four apples)
- 1 cup chopped walnuts or pecans
- 1/2 cup raisins

Streusel-nut topping
- 1/4 cup packed brown sugar
- 3 tbsp all-purpose flour
- 3 tbsp butter
- 1/3 cup chopped walnuts or pecans (the same kind as you use in the bread)
Instructions
- Preheat your oven to 350 degrees. Grease a 9 x 5 loaf pan.
- Beat the butter with a hand mixer in a large bowl for about 30 seconds. Add sugar and stir until combined. Mix in butter milk and baking powder. Add eggs and vanilla. Stir in flour and salt. Fold in apple, nuts, and raisins.
- Streusel-nut topping: Stir together brown sugar and flour. Cut in butter until mixture resembles coarse crumbs. Stir in nuts.
- Spread batter evenly in greased pan. Sprinkle streusel-nut topping over batter.
- Bake for 60 – 65 minutes or until toothpick comes out clean. Cool for 10 minutes in pan. Remove from pan and cool completely.
