Another January, another endeavor to get healthy. But this time around, I’m cooking for one and hoping to avoid eating cereal or toast three times a day. I’ve noticed that my two food problems are snacking excessively (normally just too much overall as opposed to too much at once) and dinner (why eat healthy when I can order Pizza Hut stuffed crust).
Whenever I’m cooking for just me, I tend to eat less meat and swap peanut butter, cottage cheese, and yogurt in its place. And, it might sound terrible, but I also eat chicken nuggets. For the Tyson dino nugz I normally buy, a serving of 5 nuggets is about 180 calories. Pair that with a sweet potato or some veggies and you have a solid meal. I’m also going to stock up on healthier snacks and some healthy frozen dinners. For me, these work best when I just don’t feel like cooking.
How do y’all eat healthy? Does anyone do a lot of meal prep?

I just started weight watchers, and I realized its all about the meal prep! If you know what you are eating before the meal comes it is so much easier to say no to the unhealthy thing!

I’ve fallen off with meal planning. We ate a lot of crap while we were in the hotel, and I was literally sick of it. I’m slowly trying to plan healthier meals. I know how easy it can be, but I’m having trouble.

I generally meal plan for each week, but don’t do a ton of prep – I just find it easier if we get home each night with a basic idea of what we are having than if we have to rack our brains for some creative inspiration. When I’m just feeding myself, I tend to turn to snack-type meals: carrots, celery, scrambled eggs, hummus, a little cheese and a few crackers… but the problem with that is that it can be easy to eat way more than you realize. I have to make myself a plate of things and then put everything else away!

I don’t eat super healthy. I do incorporate as many good things as I can (especially since I’m pregnant), but I can’t say no to certain (bad) foods.
I try to juice a few times a week (I get greens and fruits from the discount shelf -they are perfectly fine and cost half the price). If I can’t juice, I always have frozen fruit on hand to make a smoothie. That way I get my fruits and greens.

I am the worst at meal planning when I am alone! I get so lazy and like you just prefer a bowl of cereal! LOL it’s hard to cook for just one person!
