Key Lime Pie M&M cookies
Do you ever see an ingredient at the grocery store and know that you have to do something with it? I snagged a bag of the new Key Lime Pie M&Ms and knew these would bake up delightfully. After some deliberation, I decided on a recipe for key lime pie M&M cookies. The base of the dough is very similar to a chocolate chip cookie dough but with a few important tweaks.
The secret (to me, at least) in any key lime recipe is graham cracker. The buttery, savory graham crackers pair perfectly with the tart and acidic key lime juice. You can buy pre-made graham cracker crumbs or make your own with a food processor. I’m not going to lie, the first time I tasted this dough, I thought it was one of the best cookie doughs I’ve ever tried. And the graham cracker is absolutely the reason why. Graham crackers, butter, and two kinds of sugar combine for a sweet, chewy cookie base.
If you have it, be sure to add in more key lime juice. It helps punch up the flavor throughout the whole cookie. If you don’t have key lime juice, you don’t need to make a special trip out to buy it. Or buy a whole bottle to use on one recipe.
Finally, fold in the key lime pie M&Ms and white chocolate chips. I would also recommend roughly chopping the M&Ms. They’re a bit larger and oddly shaped compared to plain M&Ms. Chopping them makes the pieces easier to stir in and makes sure that each cookie gets a burst of key lime flavor. I then added white chocolate chips. They pair well with the white chocolate base of the M&Ms and add another layer of sweetness. You’ll scoop the prepared dough onto cookie sheets. I recommend using a huge scoop. The baked key lime pie M&M cookies are really rich, so one humongous cookie is all you need.

Ingredients
- 1 cup of softened butter (2 sticks)
- 1/2 cup of white sugar
- 1/2 cup of brown sugar
- 1 egg
- 3 tablespoons of key lime juice
- 1 1/4 cups of flour
- 3/4 cup of crushed graham crackers
- 1 teaspoon of baking powder
- 1/4 teaspoon of salt
- 1 bag of key lime pie M&Ms, roughly chopped
- 1 cup of white chocolate chips
Instructions
- Preheat the oven to 375 degrees. Line two baking sheets with parchment paper.
- In a large bowl, cream the butter and sugars together until light and fluffy (2-3 minutes). Add the egg and key lime juice. Stir until combined.
- Scrape the bowl and add the flour, graham cracker crumbs, baking powder, and salt. Combine until a soft dough forms.
- Fold in the key lime pie M&Ms and the white chocolate chips.
- Using a large scoop, scoop the dough onto the cookie sheets. This recipe yields about 18 4″ cookies.
- Bake for 15-18 minutes until golden brown and set in the middle.
