Who else out there is looking for easy summer desserts? I’ve been on the hunt for something cool and fresh, and I came up with this strawberry lemon icebox cake. It’s full of layers of Oreos, sliced strawberries, and Cool Whip. All in all, it’ll take you under 30 minutes to assemble. You will want to chill it for at least 4-6 hours to really let the flavors come together and to let the Cool Whip soften up the cookie layers. If you’re feeling impatient, you can eat it right away, but it won’t be quite as good.

The layers

A traditional icebox cake uses graham crackers. I put a twist on it by using two layers of lemon Oreos and one layer of vanilla Oreo thins. You can easily use only lemon or only vanilla or mix up regular Oreos or Oreo thins. I originally wanted to use only lemon Oreo thins, but I couldn’t find them in any of my local stores. You’ll need one family pack or two standard size packs.

I love the flavor combination of lemon and strawberries. You’ll need around a pound, and you can definitely increase the amount if you have more on hand. Hull and dice them. You can swap out other fresh berries like raspberries.

The Cool Whip

The glue that holds the strawberry lemon icebox cake together is Cool Whip. I personally like the extra creamy version, but you can use whatever you prefer. You can also swap in regular whipping cream if you don’t like Cool Whip. And you will need a lot more than you think. The first time I made this recipe, I used the standard size container. It was nowhere near enough. You’ll need the larger container.

The assembly

This strawberry lemon icebox cake comes together like a lasagna. You alternate your three layers (or four if you count the two kinds of Oreos are separate layers). I found that crumbling the Oreos helped get bits of cookie in each bite. You can skip the Oreo crumbling if you feel so inclined. The top and bottom layers are your lemon Oreos, and your middle layer will be the vanilla Oreo thins.

Ingredients

  • 1 family size package of lemon Oreos
  • 1 package of vanilla Oreo thins
  • 1 pound of strawberries, hulled and sliced
  • 1 32-ounce container of Cool Whip

Instructions

  1. Spread about a cup of Cool Whip evenly across a 9×9 dish.
  2. Crumble one sleeve of lemon Oreos and layer over the Cool Whip. Top with one third of the sliced strawberries. Spread another cup of Cool Whip over the strawberries.
  3. Crumble one sleeve of the vanilla Oreo thins and layer over the Cool Whip. Top with another third of the sliced strawberries. Spread a cup of Cool Whip over the strawberries.
  4. Crumble a second sleeve of lemon Oreos and layer over the Cool Whip. Spread a cup of Cool Whip over the Oreos. Top with the remaining strawberries and a few crumbled Oreo thins.
  5. Cover with plastic wrap and chill in the refrigerator for at least 4-6 hours.
  6. Slice and serve.
