I’ve been trying out recipes for Mexican hot chocolate brownies for a while. The idea of a fudgy brownie with a nice spice of cinnamon was an intriguing prospect. Plus I have leftover hot chocolate tabs from my Mexican hot chocolate cookies. It took me a more than a few times, but I finally found a winner. This recipe has the perfect blend of sweet and spicy, chocolate and fudgy, and chewy centers with crunchy corners. And you only need one pan to make the brownie batter.
I love how simple this recipe for Mexican hot chocolate brownies is. You melt the butter, chocolate chips, hot chocolate tab in a large saucepan. Then, you can stir the rest of the ingredients in the same pan. A few folds later, you have an easy batter. I like to add a dash of vanilla and cinnamon. The hot chocolate tab does have cinnamon in it, but I would recommend adding a bit more. More cinnamon won’t make the brownies too hot. If you want a much stronger cinnamon flavor, you can add at least a teaspoon. From there, you spread it in a greased 9×9 pan and bake.
Be careful to watch these while baking. I first tried baking these brownies for 30 minutes. That was a disaster, and they were basically a chocolate brick. I would check them at around 18-20 minutes with a toothpick. I found that 25 minutes gets you a nice crunchy crust with a fudgy, gooey center. Mac declared that they were the perfect blend of crunchy and chewy.

Ingredients
- 1 stick of butter
- 1 tab of Mexican hot chocolate
- 1/2 cup of semisweet chocolate chips
- 1 1/3 cup of sugar
- Pinch of salt
- 2 eggs
- 1 teaspoon of vanilla
- 1 cup of all-purpose flour
- 2 tablespoons of cocoa powder
- 1/2 teaspoon of cinnamon
Instructions
- Preheat the oven to 325 degrees.
- Melt the butter,the hot chocolate tab, and the chocolate chips in a large saucepan over medium heat.
- Remove from heat and cool slightly.
- Stir in the sugar, salt, and vanilla extract.
- Add the eggs and mix to combine.
- Fold in the flour, cocoa powder, and cinnamon.
- Spread in a greased 9×9 pan. Bake for 25 minutes.
- Cool completely then serve.
