Chicken apple Gouda salad

Ingredients

Chicken

  • 2 chicken breasts
  • 2 tablespoons of Dijon mustard
  • 1 cup of dry white wine

Salad

  • 56 ounce package of mixed greens or spinach
  • 1/2 cup of barbecue sauce
  • 2 apples, cored and sliced
  • 1 cup of Gouda cheese, grated
  • Optional toppers: walnuts, fried onions, cranberries

Instructions

  1. Whisk the white wine and Dijon mustard together. Pour over the chicken and marinate for at least 30 minutes.
  2. Roast or grill the chicken until fully cooked (internal temperature of 165 degrees). Rest for a few minutes and then slice.
  3. Assemble the salad: layer the sliced chicken, apple slices, and grated cheese on the mixed greens. Sprinkle on any of your optional salad toppers. Drizzle the barbecue sauce over the salad. Serve.
