I don’t know why, but doing super housewifey things is really fun to me. Except cleaning, that all around sucks. We bought a deep freeze when we moved to Colorado, and we’ve been slowing filling it up. I can prep these meals in large batches and then pop them in the deep freeze for later meals. At the moment, I work late once or twice a week to attend meetings. I’ve been prepping lots of easy freezer meals so that Mac or myself can heat up dinner without much other prep on late nights. Obviously, a lot of these are pasta, but Mac loves pasta.
Here are some of our favorites.
1. Lasagna rolls.
2. Baked pasta. A pound of pasta, a jar of sauce, some ricotta cheese, and some shredded cheese.
3. Cookie dough. Whitney posted about freezing cookie dough a few months ago. That idea is pure genius. I make a batch and freeze it in 6 cookie portions (that way, we eat fewer cookies at a time).
4. Fresh / frozen Bertolli pasta. Mac loves the tortellini, so I buy packages and toss them in the freezer. They cook pretty quickly and are easy to pair with (brace yourselves) jarred sauce.
5. Macaroni and cheese. I love this recipe for pimento and white cheddar mac and cheese.
My strategy is to try one or two new recipes each batch I make. These are recipes I normally prepare, but I’m trying them out in the freezer. I haven’t tried anything crazy, so we’ve liked everything so far.

I love a pasta heavy menu! All of your recipes sound really good and I’ve always wanted to give Lasagna rolls a try 🙂 Thanks for the cookie shout out. It’s my favorite way to make cookies these days – they are ready to eat in just a few minutes and I don’t end up eating half a batch since I’m making smaller amounts.
