Do you have an ultimate comfort food? Like no matter what is going on, that food takes you to a happy, warm and fuzzy place? For me, this chicken rice casserole is that food. This chicken rice casserole was one of our go-to meals when I was growing up, and I still love it to this day. Honestly, I’m in my 30s, and my mom offers to make it whenever I visit my parents.
This casserole can be a great way to use up leftover chicken or rice (especially if you have a few containers of plain rice from ordering Chinese takeout). If you need to cook the chicken and rice, you will have a bit more prep time. I season the chicken with seasoned salt and pepper. Then I pop the chicken in the oven to roast for 20-25 minutes at 425 degrees. Once the chicken is in, I put the rice on to cook. Your rice cooking time will vary based on the rice you choose. I personally LOVE this long grain rice blend. It has a nice nutty flavor and takes 20 or so minutes to cook. Target also puts it on sale pretty frequently. Feel free to use your favorite rice or whatever you have on hand.
I know not everyone is a fan of cream of mushroom soup, so you could swap out one of the two cans with cream of chicken or cream of celery. My mom also makes a sauce base from scratch and adds in one can of soup. I am lazy, so I use two cans. You can also adjust the amount and type of cheese. I really like the sharpness of Cheddar with the creamy cream of mushroom. You could use a nice Jack cheese or even a Swiss. I also put a solid cup or so on the top of the casserole because Mac loves cheese. I did leave it out of the photos, since you can only take so many photos of a layer of cheese. However you make it, I really hope you enjoy one of my family’s favorite recipes.

Ingredients
- 2 cups of diced cooked chicken
- 2 cups of cooked rice
- 2 cans of cream of mushroom soup
- 1/2 cup of milk
- 2 cups of grated cheddar cheese, divided
- 2 tbsp. of rotisserie chicken seasoning
Instructions
- Whisk milk and cream of mushroom soup together until smooth.
- Stir in cooked chicken, rice, and rotisserie chicken seasoning.
- Fold in 1 1/2 cup of cheddar cheese.
- Spread casserole in greased 9×13 baking dish. Top with remaining cheese.
- Bake covered at 350 degrees for 30-40 minutes.

- Cook Time: 30
