- 3 pounds of potatoes, cooked and mashed
- 1 cup of sour cream
- 2 cups of Gouda cheese
- 1/2 cup of skim milk
- 2 tsps. of salt
- 1 tsp. of garlic powder
- 1 tsp. of black pepper
- 4 slices of cooked bacon
- 2 tbsp. of chives, divided
Instructions
- Whisk sour cream with milk. Add mashed potatoes, salt, pepper, garlic powder, and one teaspoon of chives and mix until smooth.
- Fold in a cup and a half of cheese and bacon then spread potato mixture evenly in a baking dish.
- Top with remaining cheese and chives.
- Bake at 375 for 25 minutes or until cheese is melted.
