Twice baked potato casserole

Ingredients

  • 3 pounds of potatoes, cooked and mashed
  • 1 cup of sour cream
  • 2 cups of Gouda cheese
  • 1/2 cup of skim milk
  • 2 tsps. of salt
  • 1 tsp. of garlic powder
  • 1 tsp. of black pepper
  • 4 slices of cooked bacon
  • 2 tbsp. of chives, divided

Instructions

  1. Whisk sour cream with milk. Add mashed potatoes, salt, pepper, garlic powder, and one teaspoon of chives and mix until smooth.
  2. Fold in a cup and a half of cheese and bacon then spread potato mixture evenly in a baking dish.
  3. Top with remaining cheese and chives.
  4. Bake at 375 for 25 minutes or until cheese is melted.
