Because I’m a grad assistant who advises students, said students dictate my work schedule. I only work 25 hours a week, but I leave campus Mondays at 6, Tuesdays at 7, and Wednesdays at 8 (if our meetings end on time). Mac is still working long days, so we’re trying to find a good dinner plan that works for us. The freezer meals are good to have, but they can take up to an hour to cook. Mac also decided he wants to eat healthier, so I’m working a dinner salad in to our weekly meals.
Mondays: normal cooking (maybe defrosting a freezer meal the night before)
Tuesdays: Crock Pot
Wednesdays: entree salads
Thursdays: normal cooking
Fridays: normal cooking
What are your favorite weeknight recipes?

I like how you have each day marked off as something – that’s probably super helpful! We usually do one freezer meal a week, one meal I can double each week (to replenish the freezer, haha), and one crock pot meal… and then the rest are just whatever. We always plan out at least a week in advance but sometimes a whole month.

We have a similar line up. Wednesdays have to be crock pots for us because gymnastics goes so late. I did goulash this week. It was a pain having to brown the meat ahead of time, but other wise it was awesome! And I guess you could probably brown a bunch of meat on the weekend. Fridays have been homemade pizza lately. And we love grilled steak on a salad.

I am so ready to get back into meal planning! I have missed it.
