Who out there has a go-to appetizer? I love bacon cheese fries, and I order them frequently when we go out to eat (hello, all 3000 calories of Outback Steakhouse’s cheese fries. Mmm, or Cheddar’s cheese fries. Or Carolina Ale House where they use battered fries). Cheese fries are also my go-to ballpark food. So of course I had to find a way to make them at home. These bacon cheese fries are easy to make and amazing. Another successful Pinterest find. They’re perfect for watching football or as a party-sized appetizer.
You can also mix up the recipe if you have different ingredients on hand. These would taste great with tater tots or another cheese. A mix of cheddar and jack cheese will give you a nice, sharp flavor with lots of ooey-gooey, melty cheese. Throw on some green onions or jalapenos if you’re feeling wild. You can also make your own fries from scratch. If you make your own fries, soak them in water first to remove some of the starch. You can also toss them with some cornstarch to get the outsides a bit more crispy.
One of the tricks of this recipe is to make the Ranch dressing from scratch. It really does taste better, and you can adjust the ranch flavor to your personal preference. I like a lot of ranch, so I tend to be more heavy handed with the dry dressing mix. Be sure to add a little more milk to the ranch mixture to make sure that it still spreads easily. My other trick is to line the pan. It seems a bit elementary, but I forgot to line the pan once. It was a sticky, cheesy disaster.

- You want the ranch mixture to pour easily and can coat the potatoes without being too thick.
