Mashed potato tater tots

Ingredients

  • 3 cups of leftover mashed potatoes
  • 1 egg
  • 1/4 cup of flour
  • 1 cup of panko or regular breadcrumbs

Instructions

  1. Bring potatoes to room temperature.
  2. Mix potatoes, egg, and flour together until combined.
  3. Form into logs. Roll in breadcrumbs.
  4. Deep fry in 375 degree oil for 3-4 minutes until golden brown.
  5. Serve with ketchup and sour cream.

Notes

*Note: you can add extra seasonings. I seasoned the mashed potatoes with salt, pepper, and garlic salt. They didn’t need any more seasonings once they were fried.
