Chicken nachos

Ingredients

  • 1 bag of your favorite tortilla chips
  • 2 cups of cooked chicken, diced
  • 1 jar of black bean and corn salsa
  • 2 cups of shredded cheese, divided
  • 1 tbsp. of Mexican seasoning
  • Any other favorite taco or nacho toppings

Instructions

  1. Preheat your oven to 425 degrees. Line a baking sheet with parchment paper or aluminum foil.
  2. Spread the tortilla chips in an even layer on a baking sheet (preferably with sides).
  3. Sprinkle 1 cup of the cheese over chips.
  4. Toss cooked chicken with Mexican seasoning. Spoon chicken and salsa over chips.
  5. Top with remaining cup of cheese. Bake at 425 for 8-10 minutes until cheese is melted.
