1. If you could only eat one thing for the rest of your life, what would it be?
Pizza. All day, every meal forever.
2. What’s your guilty pleasure/comfort food?
Carbs. I love mashed potatoes, Stove Top, baked treats.
3. What’s the weirdest/craziest thing you’ve ever eaten?
Alligator. It really does taste like chicken. Conch meat (like the animal that lives in the seashell).
4. What foods do you avoid at all costs?
Seafood, fungus, undercooked ground beef, raw milk. I’m a food scientist, so I’m very particular about how my food is prepared.
5. What meal reminds you of your childhood?
My daddy’s chili. He makes this savory, spicy meatless chili that has won most of the office chili cook-offs he’s entered in. One particular runner-up complained that it was vegetable soup, not chili.
6. Share one of your favorite recipes and the story behind it.
My mama’s chicken rice casserole. This is how I make hers (the closest I can get mine to tasting like her recipe while using her recipe).
2 cups of cooked, diced chicken
2 cups of cooked rice (I prefer wild rice)
2 cans of cream of mushroom soup
1/2 cup of milk
2 cups of shredded cheddar cheese
2 tablespoons of rotisserie chicken seasoning.
Whisk the mushroom soup and milk together to remove all lumps.
Stir the chicken, rice, seasoning, and half of the cheese in the soup mixture.
Pour into a greased dish and top with the remaining cheese.
Bake at 350 for 45 minutes (the longer, the better).

I’ve actually had alligator once too…it was fried though, so it really just tasted like deep fried crispiness!
