I’m always on the lookout for meal prep tips and tricks. I happened across this recipe pin for an easy fajita filling of chicken with peppers and onions straight from the oven. It works rather well, and I’ve tried modifying it with different seasonings.
You just bake chicken with peppers and onions (I use green, yellow, red, and orange peppers and yellow onions). I buy multi-packs of bell peppers from Sam’s Club and slice and freeze the veggies together. Normally, the packs come with yellow, red, and orange peppers. I add in green peppers and onions. If you’re prepping dinner, you can grab a handful of the pepper and onion blend and toss them in baking dish or on a baking sheet with chicken.
Different variations:
Mexican or taco seasoning and fill tacos or fajitas or top salad.
Italian seasoning and pasta for a quick chicken pasta primavera.
Rotisserie seasoning for a savory chicken Philly filling.
