Easy cookie bars
I saw this recipe the other night and decided to give it a try. While I love cookies, I also love the sheer laziness of cookie bars. All the taste and chewiness of cookies without the hassle of scooping dough. You also don’t have to soften butter or chill the dough. The base of the recipe is a boxed cake mix. You just add melted butter and eggs. I prefer to make this with yellow or butter cake mix. Depending on what you like in your cookies, you can stir in most of your regular cookie add-ins. I tend towards chocolate chips and / or M&Ms. But I am interested in trying this with some other cake mix flavors and other stir-ins. I think chocolate cake mix with cherries sounds pretty tasty.

- 1 box of yellow or white cake mix
- 2 eggs, beaten
- 5 tbsp. of melted butter
- 2 cups of chocolate chips or M&Ms (or a mix)
Instructions
- Preheat oven to 350 degrees.
- Mix cake mix, eggs, and butter with spoon. Fold in candy.
- Press evenly into greased 9×13 pan.
- Bake at 350 degrees for 18-20 minutes until puffy and golden brown. Cool and slice into bars.
