I’m a big fan of sweet treats and also love easy recipes that don’t need a preheated oven. If you’ve ever made Rice Krispie treats, you should try these peanut butter cereal bars. They’re a remix of the classic Rice Krispie treat and are made with Reese’s Puffs peanut butter cereal. Reese's Puffs, marshmallows, and melted butter combine for divinely tasty peanut butter cereal treats.

The peanut butter and chocolate flavors pair well with the marshmallows for a sweet and almost savory treat. I have also found that the store brand peanut butter cereal works and tastes just as good as your name brand. And you’ll only two more ingredients with your cereal: butter and marshmallows. You melt the butter and marshmallows together and fold in the peanut butter cereal for a no-bake dessert that’s ready in no time.

I also love how the melted marshmallow and butter mixture coats the bottom of the pan. The bottoms of the peanut butter cereal bars become incredibly chewy and just totally delicious. If you like a bit more texture in your peanut butter cereal bars, you can stir in mini marshmallows, chocolate chips, peanut butter chips, or Reese’s pieces.

One of my favorite cereal bar tricks is to line my pan with plastic wrap. I use pieces that are large enough to overlap each other. After I spread the cereal bars in the pan, I fold the plastic wrap over the top of the bars and press down. This can help level out your treats without making a sticky mess. Let the treats cool for an hour or so. Then carefully tip the wrapped treats out of the pan, flip over, and put them back in the pan. You can press down on this side to make sure your treats are even on both sides. And maybe you can cut more even bars than I can…

Ingredients

Scale
  • 6 cups of peanut butter puff cereal
  • 4 tablespoons of butter
  • 10 oz (one small bag) of marshmallows

Instructions

  1. Coat a large microwave-safe dish with non-stick spray. Add the marshmallows and butter and heat in the microwave until melted (1-2 minutes depending on your microwave).
  2. Remove the dish from the microwave and stir the butter and marshmallows until they are a smooth consistency.
  3. Add the cereal and fold until all the cereal is coated with the marshmallows. I prefer to mix in a cup at a time to make sure all the cereal is coated.
  4. Line a 9×13 pan with parchment paper or plastic wrap and spray with non-stick spray. Pour the cereal mixture into the pan. Use your spatula to press the mixture into the pan and even out the treats.
  5. Cool and slice into bars.
  6. Enjoy!

Notes

Coat your bowl, pan, and spatula well with non-stick spray. Melted marshmallows are incredibly sticky. You can also use a piece of parchment or wax paper to press the bars into your pan.
